Yellow Komali corn tortillas (15 cm) from Mexico, ideal for tacos and tostadas. They are made with nixtamal, not conventional cornmeal. Nixtamal is made by cooking the corn in water with lime, dehulling it, and then grinding it. This ancient method used by the peoples of Mesoamerica gives the corn, and therefore the tortillas, a distinctive flavor.
